If you have the proper ROMs installed, you need to give MAME command line parameters. Try:
mame snspell
In a few seconds you should hear the startup sound of the Speak and Spell. Once it's going, hit 1 for Go, 2 to replay the game, 3 to repeat, 4 is clue for mystery word game, 5 is mystery word, 6 is secret code, 7 is letter, 8 is Say it, 9 is normal spelling mode, 0 is module select which isn't worth much since I haven't been able to find any expansion modules.
To exit, hit escape. If that doesn't work, hit scroll lock, then escape.
