Macs became pretty popular in the blind community after VoiceOver was created. iOS devices are also very popular. The one thing to be careful with if you're developing for iOS is Canvas. As of right now, I don't think there are any Canvas apps that work with VoiceOver without some kind of a separate interface being built.
Sebby, just because you can't think of a way to get VoiceOver to recognize flash, doesn't mean noone on the VoiceOver development team can. Put simply, it never hurts to ask. The worst they can say is no. I've heard they're working on a way to get VoiceOver to interface with Canvas, which is about 200000 times worse in terms of accessibility than flash is.
