You also need to know if you are trying to achieve optimum current
transfer or voltage transfer from source to sink...
For example, whilst it is accepted wisdom that the input impedance of a
power amp should be at least 10x that of the output impedance of a
pre-amp (to avoid the loading problems that opaqueice describes very
nicely), a 600 ohm microphone needs to see a 600ohm input impedance,
and a 75ohm SPDIF expects 75 ohms at the other end (likewise video
signals).
