russelk, it requires quite a bit of transparency to easily hear it after
256kbps.
To me MP3 sounds like it has less air, congested, more mono, less
transparent and spacious. More simply said it's muddy and has more
bass. Because they usually cut high frequencies and overlap sounds so
that if there is a big punch you don't hear anything behind it.

None of these will strike you like a day or night difference. And you
might need to crank it up to be easily heard.

Start with 128kbps and move up a notch, 128 should sound like broken
and kinda "dusty".
But if you usually don't hear an extended high frequency range it might
be very hard to hear the difference in general.
