I have put the following information on the website,
http://www.oooauthors.org/english/userguide3/res3/howto_update.

Our goals for the next round of reviews and updates of the OOo user
guides (Getting Started, Writer Guide, Calc Guide, Draw Guide, Impress
Guide) are:

1) Put chapters into new template (mainly new branding). Getting Started
has been done.

2) Make improvements, including new screen captures where needed to
include new icon sets. For screen captures, be sure to use the Galaxy
icon set (in Tools > Options > OpenOffice.org > View), not Automatic
(which can vary with your operating system).
For more about creating and inserting images, see
http://www.oooauthors.org/english/userguide3/res3/howto_figures

Other improvements might include adding topics or examples (or creating
stand-alone tutorials or how-tos and referring to them from the user
guide), revising topics to make them more useful, reorganising chapters
(either moving topics within a chapter or, in some cases, moving
material from one chapter to another), and so on.

When in doubt, ask!

3) Update the chapters for any changes coming in OOo V3.3 (due out in
October, unless it's delayed). At some point this means downloading and
installing developers' builds and beta releases of OOo 3.3 for testing
and screen captures. You can get these builds from
http://download.openoffice.org/next/index.html
If you have never dealt with developers' builds before, many people at
OOoAuthors can help you with any questions you may have.
