You can always reinstall from source. If you don't want to do that, a 
symlink is not a horrible alternative.

If you want to change it for real, the places that mention the datadir are:

1. config.pl:
  $Conf{TopDir} = '/var/lib/backuppc';

2. (backuppc install dir)/lib/BackupPC/Lib.pm:
  $topDir     = '/var/lib/backuppc' if ( $topDir eq "" );

3. lots of places under the doc directory, but this shouldn't affect the 
actual operation.

The most important place to change it is in config.pl.

Don't forget to move/copy your existing data, preserving permissions, and 
restart the daemon.
