OK! Sounds like there might be a bug. Can you file an issue on GitHub with full 
inputs and outputs pasted in? That is, show the `beet info` output for the 
original files, show `beet -vv convert` (preferably running in the *default* 
configuration), and then show `beet info` output for the converted files.

That level of detail will help us reproduce the problem.
