I just wonder how typing pdflatex -option1 -option2 source sometimes and 
then invoking bibtex might be "more convenient" than pressing a keyboard 
shortcut in TexShop…

Herb Schulz offers his latexmk scripts (including all kinds of 
pdflatexmk and xelatexmk and whatever) at http://homepage.mac.com/herbs2/.
The idea of these scripts is to minimise the effort of multiple runs. 
The scripts just repeat all the necessary steps for indices, 
bibliographies and pdflatex runs until the document is finished. I guess 
they can also be used directly from terminal, but then they should 
probably not be installed in ~/Library/TexShop/bin but somewhere in your 
$PATH (if you don't want to switch to typesetting directly in TexShop).
