Can't comment on the rear but I changed a front double on a road bike to an MTB triple. Shifters were Shimano Ultegra 2 x 7. The front shifter did not have quite enough travel to reliably handle the triple. FD was an MTB for the smaller chainrings.
Our tandem had bar ends, so I picked up a set of the old Sun Tour with the black plastic handles from the bargain table at LBS. They have enough travel & are now on a 3 x 8 set-up on a touring bike.
