Here is a recipe I like for the cookbook and list.
Savory Lamb and Olives
2 onions, chopped 1 1/2 tsp. dill weed
2 carrots, sliced 1 1/2 lbs. lamb stew meat,cubed
3 T. cooking oil 2 T. flour
1 1/4 c. water or burgundy wine 1 large tomato, wedged
2 cloves garlic, minced 3/4 cup pitted olives
1 bay leaf 2 T. parsley, minced
1 tsp. salt
1/4 tsp. pepper
Saute onions and carrots in oil in Dutch oven about 3 minutes. Add 1 cup
water (or wine), garlic, bay leaf, salt, pepper and dill weed. Simmer 2
minutes; add lamb and cover. Bake at 400 degrees for 1 1/2 hours or until
tender. Blend flour with remaining 1/4 cup water. Stir into pan liquid.
Mix in tomato and olives. Return to oven and bake, uncovered, 10 minutes
longer. Sprinkle with parsley. Serves 4-5.
