I do not know about an Olympic event however it has always worked for me. 
When I flip them over I hold the head by the horns (if they are developed 
enough) and make sure that their feet are straight up in the air. It doesn't 
physically hurt them but it sure lets them know who the "ALPHA" male in the 
area is! They seem to hate this and won't go near me.  I go to a lot of work 
to catch them when I need to......
