Luckily when you process a lamb you get most of it back. Intestines, head, and skin are about the only throw - aways. Talk to your processor. They will be glad to answer any questions you have about amounts. It may take a time or two get the processing exactly how you like it. But the shoulders is the toughest of the cuts so we always turn it into stewmeat or burger. Try bbqing some of the meat. I am in Texas so bbqing sheep or goat is a good thing. Just don't cook too long as the blackbellies will dry out quickly because they are not a fatty sheep.
