Diane:

I would figure that you should get about 30-35lbs of meat from a 50lb
animal, which is about what we normally get. We normally ask for leg of
lamb (bone in), shoulder roasts, chops (loin), brisket, rack, shanks,
(great for soups), some stew meat, and the rest ground lamb (great for
taco, chili, lasagne, enchilades, even spaghetti. You should have enough
meat for the stew and ground. We even ask for the kidneys, heart,
fryers, liver. We use them for gravy giblets, for our cats and dogs
(after boiling them, they love to eat them) or even for some homemade
Haggis (Yes, were Scottish).

Hiya!
I'm going to be taking a February lamb to the processing plant on
Monday.  She's fairly good sized, if I had to guess how much she weighs,
I'd guess upper 40s to lower 60s? Keep in mind that I'm GUESSING.  I
have a bag of dog food (40lbs) to compare her to.
Does anyone have any idea of WHAT I should expect to take home?
I was thinking of asking for stew meat, legs o' lamb, shoulders, chops &
rack... is there anything left for burger or sausage? or would I give up
shoulders for stew meat? shoulders for sausage?
Sorry, this is my first processed lamb... I'm totally ignorant!
