I'm thinking it was pulled out of the instructions because LFS-6.0 required a specific version of the stylesheets referenced as 'current'. But I could be wrong.

My memory is hazy on this (possibly beer-related!). I think LFS (and BLFS) tried to be as accomodating as possible with the version of the stylesheets installed. However, recently there have been some not-quite-backward-compatible changes made to the stylesheets that break the rendering of the books. As such, I personally think it is dangerous to reference a 'current' version of the stylesheets as the author of whatever documentation is referencing it has no idea what the rendered output will look like. That is why the decision has been made to hardcode version numbers back into LFS' Makefile.
If BLFS is willing to accept that some docs may not render as originally anticipated, then putting that symlink back in shouldn't cause any problems - if it does then it's a bug in the upstream package.
