Jason, you're already on the right track.  You can highlight all of the 
files on the disk, copy them to your clipboard and then paste them into your 
My Documents folder.  Now, if you're going to create a special folder for 
this, you'll need to be in that folder before you can paste the copied 
files.  If not, regardless of whether the folder is highlighted or not, the 
files will end up in My Documents but not in that particular folder.  To 
copy a series of files as you have described, the best method is to press 
Control A.  That is assuming that you want all of those files copied and 
then pasted.  This is something we do all of the time at work.  Not to worry 
Jason as long as you're copying, not deleting.
 The original files will remain unchanged.
