I am not a Window Eyes user, so I can't help much with that,
only to say if it has a keyboard help like Jaws does, I would start there.
Once you become familiar with the keyboard, and the Window Eyes commands, it
will be easier to navigate Windows.
 I would just explore the computer, and see what is there, and  ask any
questions as they come to you.
There may also be a command in your screen-reader that will present you with
a list of Windows keystrokes.
