If so, I think ABBYY FineReader 11 is the good choice.
I've not try it but my friend's already and commend that it is good to recognize tables. Besides to scanning document in English, the software also support some other languages.

When I saw the initial post on this thread I thought to myself, "Great, maybe I can get some tips on using off-the-shelf scanning applications."

I was disappointed to see that OpenBook and Kurzweil were thrown back at us here.

Correct me if I'm mistaken, but I do believe the original question was regarding the standard software that comes with many scanners.
