I have a double burner grill and both burners  have a temp
regulator.
I have  cranked this grill down so low as to do Dutch oven
cooking,  baked fish, chicken or Devil dog barbecued ribs. I
have also  turned it up high enough to do a quick steak or
burger. 
It took a bit of getting use to but now I have made friends
with it and I love it.
BTW if you want the recipe for "devil Dog Barbecued ribs"
write me off list and I will send it to you.

Dear Don and list members:
    I can not imagine a gas grill without a control valve
which regulates the temperature.  If the grills have a
regulating valve, but the heat remains too intense, I would
contact the manufacturer or the dealer where it was
purchased, to discus a repair. 
    Our Sears grill, which is ten or fifteen years old, has
a whole in the bottom where grease or other juices drip out,
and there is a wire holder which holds a jar or can which
catch the material during cooking.  It is easy to empty this
container between cook-outs.
    
    I agree that charcoal still has the best flavor and the
next grill I buy will have that as an option, if not the
only method of cooking.
