Michele, I believe you are asking about saving email addresses in KeyMail, not Windows. This is not automatically done but you can do it.
You can go to the "From" entry when reading an email and press BACKSPACE with K (for copy). This will copy the sender's email address to the clipboard. Now in the address list go to the desired record and get into edit mode with Backspace and c.
