Below is my grandmotherÂ’s 
refrigerator dough recipe.  
It is a very old recipe 
(my mother is over 90) and 
I canÂ’t have family and/or 
friends over without making 
‘the rolls’!  

The dough also makes a very 
good cinnamon roll foundation.  

The rolls are best finished 
up ‘pocketbook’ style.  They 
need to be cut out with a 
cutter approximately 2” in 
diameter.  They are not that
labor intensive but it does 
take three days to make them 
properly.  I learned this 
recipe at my grandmotherÂ’s 
knee and IÂ’ve tried to write 
the instructions as clearly 
as possible.

REFRIGERATOR ROLLS *

  Amount  Measure       Ingredient -- Preparation Method

  1   cup  shortening

 3/4  cup  sugar

  1   cup  water -- boiling

 2    whole  eggs

  2   packages  yeast

  1   cup  water -- warm

  6   cups  flour -- unsifted

  1   teaspoon  salt

 

Cream together thoroughly the 
Crisco and sugar.  

Add the 1 cup boiling water.  

Stir until completely dissolved.  

Cool.  

Mix in the eggs.

Dissolve the 2 pkgs. yeast in 
the warm water.  

Add to the above mixture.

Mix in 6 cups unsifted flour 
and the salt.  

Let rise in a warm place until
doubled in size.  

Punch down (work slightly) and 
put in a greased bowl.

Grease top of dough.  

Divide dough into two large Ziplock 
bags. Refrigerate.

 

The next day, pat down dough and roll 
it out on a floured surface.  

Cut into circles (about 2 inches in 
diameter).  

Brush with melted butter and fold in
half, pinching edges together.  

Place on a cookie sheet lined with foil.

Brush the tops of the rolls with more 
melted butter.  

Cover and refrigerate.

Approximately 3 hours before baking, 
pull the rolls out of the refrigerator
and place, still covered, in a warm 
area to rise again.

Preheat oven to approximately 400° F. 

Bake approximately 18-20 minutes.
