made this for St. Patrick's Day and it was delicious!

Applesauce Irish Soda Bread

3 cups all-purpose flour
1 TBSP sugar
2 tsp. baking soda
1 tsp. salt
1 cup low fat buttermilk
1/2 cup apple sauce (I used Natural....unsweetened applesauce)
1/4 cup butter or margarine, melted
2 TBSP skim milk
1/2 cup raisins
Preheat oven to 375. Spray and 8" round baking pan with nonstick cooking spray.
In large bowl, combine flour, sugar, baking soda and salt. In a small bowl,
combine the buttermilk, apple sauce and the melted butter. Add apple sauce
mixture to the flour mixture; stir until mixture forms a ball. Turn out dough
onto well floured surface; knead raisins into the dough. Pat into a 7-inch
round. Place dough in prepared pan. Cut cross in top of dough, 1/4 inch deep,
with the tip of a sharp knife. Brush top of dough with milk. Bake for 35 minutes
or until toothpick inserted in center comes out clean. cool in pan for 10
minutes. Invert onto wire rack; turn right side up. Cool immediately. Cut into
16 wedges.
