I have good experiences with the two-bucket system. Simple (food-grade) plastic buckets, drill a few thousand small holes in the bottom of one, and install a tap in the other. Interesting idea, but I suspect it has some interesting failure modes. 10-20 liters of mash weight quite a lot, and if your bag ruptures in the middle of the process, it will make one hell of a mess. You still need a pot or bucket to collect the wort, and a way to take some of it out and put it back into the mash, to improve clarity. Still, interesting idea.
