Note that he does not say that all top-fermenting yeasts are low-alc, but that (at that time??) in Denmark, there were two kinds of yeasts, Calrsbergensis, and "Cervisiae", which was top-fermenting, and low in alcohol tolerance. Now the question is if anyone has this old yeast available any more? Perhaps Carlsbergs library has a sample of it, or WhatsHisName Jørgensesn Laboratory?
