Since this is peacefull Christmas time, I will not even comment anything about those mysterious Arab countries preparing bio/chemical weapons of mass destruction... You can get guaranteed non-toxic mixtures from Wyeast that contain some (more or less) wild yeasts and some (relatively) harmless bacteria. With these you can produce fair imitations of the Belgian Lambic Mysteries, without risk for life or health. But be warned, those things can be tricky to get right, and take ages to mature to the right level. Them Belgians have great expertice (several generations?) of blending older and younger lambics, to get to the desired taste.
