Sure, that should work all right. I guess many of those are written by people who happened to have a sack of this and a sack of that, or some old rests. That is the way my receipies often come around... Recently I have started to go towards the KISS principle (Keep It Simple, Stupid), mostly to learn more about each of my malts and hops. After mixing a lot of things for a while, it is somehow refreshing to aim for simple purity. For a while, that is... I never know about my next brew until it is halfway done... Some times I get a last-minute inspiration, and turn a perfectly good pale ale into a spicy porter, just for the heck of it. Not very scientific, but who cares.
