Yes, of course you can. Just remember that you dilute the good taste in the same proportion, and bitterness, and, well, everything. You can add one part of water to two parts of beer (2*7.5%+1*0.0%)/3 =5.0% Your effective gravities will then get to 1.041 -> 1.004. The FG is a bit on the low side, meaning a dry beer. Of course you will have to watch out for infections in the process, probably boil and cool the water, and all that. And yes, let it rest for a while, that is said to help to even out the taste. Do yourself a favour, and make a few bottles at original strength, so you have something to compare to. Even better, make a few bottles at 2.5%, just to see what that does to the brew.
