Keep asking. That's what keeps the discussion going here! Sure, why not? Depends. Less than a week, and it doesn't really pay off. No upper limit, as long as you keep the airlock filled. I have forgotten a bottle for a few months with no bad effects. At some point the fermentation stops, and the beer starts aging just as if it was bottled. (jeg bor i Århus) Brygladen sells some nice plastic buckets. They have a fitting for the air lock, and a tight lid. The nice thing is that when you take the lid off, you have full access to the whole bucket. Makes cleaning easier. That shouldn't matter too much, unless you plan to ferment for months and months - then you might get some air leaking in, and oxidizing your beer. In the beginning the beer produces enough CO2 to drive out any nasy O2's. Best regards Heikki -- Heikki Levanto "In Murphy We Turst" heikki (at) lsd (dot) dk
