Serve it with a piece of sugar in every glass :-)

Perhaps we could add a bit of sugar in the keg just before serving, so
it won't have time to ferment. The kegs won't explode, they can handle a
lot of pressure, and have an overpressure valve.

I would advice you to wait a bit in any case, to see how the taste
develops.
