That is what I have experienced in my mash-tun as well. I have no heating in the system, I just add hot water. And no matter how much I stir, I still get several degrees difference in various places of the tun. I usually take a few readings, and if all of them look reasonable, I say it is good enough. I don't even aim at a certain temperature, I have two generic classes: high 60's and low 60's. Then I sparge with small amounts of (nearly) boiling water, to raise the temperature. And it always ends up as being beer anyway. -H P.S.
