Theory is all good and well, but in this case I would suggest a few
practical measurements. Measure how much disappears from *your* pot, the
way *you* normally boil. Write this down for a few brews, and you should
know your system.

It is easy to measure, by sticking a (metal!) ruler in the pot, and
reading the depth. I guess most pots are cylindrical enough for this to
be precise enough. For cooling everyone seems to believe in a "loss" of
4%.
