Theory is all good and well, but in this case I would suggest a few practical measurements. Measure how much disappears from *your* pot, the way *you* normally boil. Write this down for a few brews, and you should know your system. It is easy to measure, by sticking a (metal!) ruler in the pot, and reading the depth.
