There are a few different limiting factors:

  - If you have the slightest infection in your beer, it may well get
    worse over time. Drink it while it tastes good
  - Many beers improve over time, up to a year! A lot depends on the 
    way you store them (cool, dark, constant temperature).
  - Most home brewers get impatient at some time, and drink their beer. 
    For me this has been a common thing...

In short, keep it for a few weeks, and then take a sample every now and
then. Make careful notes, and once you have consumed all your beer,
and if you were lucky, you have got a few of them just at their best...

But remember, it will be beer in the other bottles too!
