Not necessarily! The mash efficiency tells how much sugars you get out of the mash. If you want to optimize the strength of your beer, or the material costs, then yes, optimize your mash efficiency. But if you are more interested in the good taste of your beer, then it may make sense to aim for a bit lower than maximal efficiency. Sacrifice a bit of the sugars, use more malt for the same OG, and you get more malt taste in your beer! In other words, don't worry too much about that efficiency. If it gets high, you get stronger beer, if it gets low, you get tastier beer. No matter what, you win! And it will be beer anyway! -H -- Heikki Levanto heikki at indexdata dot dk "In Murphy We Turst"
