No, not always. I have made good starters from
- light spray malt
- old wort
- plain sugar
- apple juice
All of them work. Apple juice is a bit controversial here, but it has
some nice properties. Most of all, it comes in a pretty sterile package,
which can be used for the starter. Just pour yourself a glass to begin
with. It also has a suitable Ph, and some useful salts for the yeast...
All the things plain sugar lacks. But that works too.
Dark malt makes - surprise - a darker starter. Probably that won't make
much of a difference to anything. If you want to see how light a pilsner
you can make, use a lighter starter too. Otherwise don't worry.
How ever you start it,
as long as you keep your starter and beer free from infections,
it will be beer anyway
