some remarks:

Normally the EPS files should be using -dgs-load-fonts which lets GS load the fonts directly from disk (saving disk space) but for regtest files, this is somewhat complicated, since that ties the .eps file to the FS layout of the generating host.

One option is to include one full-unicode font that hopefully would be the
preferential fallback for any uncommon character. IIRC there is a mechanism that treats the lilypond fonts itself specially to ship them inside the regtest tarball. That would also some solve some other problems on platforms that lack fonts. IIRc
there is Cyberbit.ttf which is a free Unicode font.
