After `mock -r epel-7-x86_64 --scrub=all` start working again ... the error "execv(/usr/bin/yum) failed blabla" was gone . Setting config_opts['package_manager'] = 'dnf' in ~/.config/mock.cfg and after do `mock -r epel-7-x86_64 --scrub=all` , I got the error [1] , the suggestions of Miroslav doesn't worked for me ...
