Installer doesn't deal with SAN disks in special way for now - all disks are treated equal. That means if special treatment is needed from the installer, then it will not be possible to install on such storage. For instance, there is currently work in progress to allow installation on SAN iSCSI devices. I haven't played with SAN too much but I think your assumption is correct - if SAN disks are visible to AI and some of them meets criteria, it is picked up for the installation. The general approach is that if modifications are needed to support installation on special storage, team owning that technology prepares necessary changes (since it has all necessary know how) and we coordinate with them to appropriately integrate those modifications into the installer. If you encounter problem during installation, you could file bug against the installer - initial triaging will be done and if applicable it will be redirected to the appropriate category.
