This is the "quick" method of making a cake and it is the method upon
which cake mixes are based.  The difference is that you use better and
fresher ingredients as well as real, not synthetic, vanilla.

2 1/4 cups sifted cake flour
1 1/2 cups granulated sugar
3 tsp. baking powder
1 tsp. salt
1/2 cup shortening
3/4 cup milk
1 1/2 tsp. vanilla
1/4 cup milk
2 medium eggs, unbeaten

Sift together flour, sugar, baking powder, and salt into a large
mixing bowl.  Drop in shortening; pour in 3/4 cup milk and vanilla. 
Mix at medium speed on mixer for two minutes, scraping bowls and
beaters as necessary.    

Add the 1/4 cup milk and eggs and beat two minutes longer.  Turn into
2-8 or 9-inch pans and bake @ 350 degrees for 25 minutes or until done.  

Cool in pans for about 10 minutes on a wire rack.  Remove from pans
and cool on wire rack completely.  

It also may be baked in a 13X9X2-inch pan @ 350 degrees for 35 to 40
minutes.

It got it from the Good Housekeeping Cake Cookbook by the editors of
Good Housekeeping, page 16.  

PS: be sure you use cake flour and not all purpose flour.
