Sweet Hummingbird Cake An old-fashioned, traditional style, filled with bananas and pineapple, our almost-homemade version of this easy-to-make cake will have you humming with delight! It is a super moist, tender cake with just the right amount of sweetness, fruitiness with a little bit of icing and a little bit of nuts! A wonderful cake to take to a pot-luck or to bake for your family and friends during the holidays or on weekends.
Ingredients Crushed pineapple - 8 Ounce Bananas - 3 Large, sliced Milk - 8 Tablespoon (1/2 cup) Eggs - 2 Large Vegetable oil/Canola oil - 4 Tablespoon (1/4 cup) Vanilla extract - 1 Teaspoon Dark rum - 4 Tablespoon (Optional) Banana cake mix - 18 1?2 Ounce Vanilla frosting - 16 Ounce Directions GETTING READY 1. Preheat the oven to 350 degrees F. 2. Grease and flour a Bundt cake pan. MAKING 3. In a large batter bowl, beat together pineapple with juice, bananas, milk, eggs, oil, vanilla extract and rum, if using, until well blended. 4. Stir in cake mix quickly and lightly, mixing only until moistened. 5. Pour into a greased and floured Bundt cake pan. 6. Bake at 350 degrees on middle oven rack for 40 minutes, until top springs back when touched. FINALIZING 7. Cool for at least 45 minutes; invert onto a serving plate. 8. Microwave frosting on high setting 15 to 20 seconds, until runny. Let stand for a minute before drizzling over cake. SERVING 9. Slice into wedges and serve.
