done; I incorporated also new spandsp version which seems to definitively
SOLVE my problems:
till now, I sent consecutively 8 faxes to 3 different fax machines, without
any problem
you can find the logs at

in the 8th fax, I setup again default nat to nothing, so I have

Default Settings:
-----------------
  Context:                default
  Nat:                    RFC3581

and in the peer definition I have nat=never

now in the log you can see lines like:

net/peer nat=No/global nat=RFC3581/Channel:--)
Oct 23 11:13:45 DEBUG[3059174288] chan_sip.c: Nat is not needed (default)
Oct 23 11:13:45 VERBOSE[3059174288] logger.c: Reliably Transmitting (no NAT)
to 192.168.69.230:5060:

(I moved the ata on another network, the 192.168.69 net, routed and not
antted to the 192.168.100)

So it seems to me that this version of chan_sip does not have that problem
of not overriding default NAT setting
with peer specific nat setting; in other words, it seems to be perfect !
