My wife and I met while we were serving in the Peace Corps. By the time we left the service, we were expecting our first child. Strangely, pregnancy and birth are covered under "workman's comp." Filling out the forms proved to be a challenge with questions like: "Describe in detail how and where this accident occurred." "What could have been done to prevent this accident?" and our favorite: "What will you do in the future to prevent this accident from happening again?"

The Recipe File

Pasta, Seafood, Eggs and Grains:
Green Rice

from Traditions...
A Taste of the Good Life


INGREDIENTS:
1 cup uncooked rice
3/4 stick butter
1/2 large bell pepper, chopped
1 onion, chopped
2 celery rib tops, chopped
1 (10-3/4 ounce) can cream of mushroom soup
1/2 teaspoon basil
1/2 teaspoon marjoram
1/2 teaspoon curry
  Salt to taste
  Pepper to taste
1 cup grated mild Cheddar cheese
1 cup grated sharp Cheddar cheese
TO PREPARE:
 
Cook rice in 3 cups of water until tender.  Saute bell pepper, onion and celery in butter.  Dilute mushroom soup with 3/4 can water, and heat to a boil.  Add sauteed pepper, onion and celery.  Add basil, marjoram, curry, salt and pepper.  Mix with rice and transfer to a buttered baking dish.  Top with the mixed cheeses and bake at 350 degrees for 20 minutes or until hot.
