The earth should go to the earth bonding point on the hull of the boat, 
which should be adjacent to the 12v-ve bonding point.

As for switching it depends on the type of inverter and whether it has mains 
input. If it does then just put mains into it and let it deal with the 
switching.
If it doesn't you will need a centre off change over switch that will handle 
at least 16amps.
