The trick with a Canada Goose is to only go for its breast, Greasy, yes; but
then that is the nature of all geese, even those bred for the table. Oven
roasted  slowly in foil with lemon and garlic over a pan of water. Brown to
finish under the grill.

Or so I'm told :)
