Unlike FR where IPs are actually assigned to the interfaces, in PPPoE
configuration they are assigned to the Virtual-Templates.
Virtual-Templates are not interfaces, so you cannot ping them.

Using unnumbered interfaces is the only way to provide self-ping in
PPPoE setup, as far as I'm aware of.
