You can do a lot of it on GNS3 but it's no good for any advanced switching, NAT, OER, NBAR, etc. You will need Proctor labs for a realistic overall experience, especially closer to your actual lab date. I had the same problem with the time zones and Proctorlabs - i just had to get used to jumping out of bed at 5am and firing up the labs while the coffee was on...
