I do not think this is possible. If i recall you only have access to a few applications on the LAB PC, and I do not recall seeing MSPAINT as one of them. I'd also try staying away from doing anything in the LAB that sucks up time. TIME is not your friend in the LAB you will need all the time you are given and wasting it making snap shots of the diagrams that cisco is already providing you is not a good time management method. Better yet, get use to using a 23" screen with all your separate terminals open, a webbrowser open with a few diagrams open and learn to move between them seamlessly, as this is what you will need to do in the LAB.
Use notepad as much as possible and draw a quick diagram of your Layer 2 topology when you are doing the L2 portion to ensure you have all your L2 pieces together.
