I would personally keep it as simple as possible unless the book tells you to add something else...
switchport mode trunk switchport trunk native vlan XX <<< Add only if it tells you to have a PC behind the phone. switchport voice vlan XX I would not go with the access method unless spanning-tree portfast is a requirement as access on ESW is not stable.
