Esx(i) doesn't require a Windows server, only a Windows machine to run the VIC or whatever they call the newer version of the client. (Much of the time, the client can be dispensed with by either using vm-command and also some *limited* administration from a web brower.) Note that there's a neverending thread on vmware forums for a Linux client, and I believe it was finally promised in the Sept 2009--but I could be really wrong with that date...
