I understand that 'Mexican' food e.g. tacos, burritos etc. are American
creations.

There used to be a restaurant in my town that served 'authentic' Mexican
regional specialties, but they were taken over by a chain and switched to
'Amerimex' food <sigh>.

One item they had I still remember after a number of years - mild poblano
chile stuffed with rice and meat flavored with walnut and pomegranate.

No kidding.  I went to Mexico once and the food there wasn't much of
anything like the 'Mexican' food we have here in the states.
