How does one determine if someone is more than a girlfriend but not a
wife?
If your not married, should not be a question. Unless your engaged.

I call my significant other my boyfriend.

For gay people, it usually depends on how close the relationship is as
well as how comfortable they are with people knowing they're gay.  For
others, it probably just means "more than girlfriend, less than wife."
