Thanks all! One of the judges told me that they tested it with fresh edamame, since peas are through for the year and they though that would be a better sub than frozen peas. They're making it in mass quantities for the actual festival where they present the awards - and I have to do a demo of how to make it. So, this weekend I'm going to see if I can find edamame and try it that way, and also try it with frozen peas to see which sub I like better.
